Can I make a countertop beverage cooler into a freezer?
Will changing the thermostat be enough to allow an open compartment, small, countertop fridge to freeze the revels and fudgesicles?
I’d like to do this to a 2.5 cubic foot glass door beverage
cooler. All suggestions appreciated.

No. Beverage coolers are engineered to chill wine to approx 40 F, and you need closer to 0 F. The machine you have can’t pull heat out as fast as it will leak back in, because the compressor/condenser set has insufficient capacity, the glass door will not insulate well, and the sides, top, and bottom have much less insulative ability than a small freezer would have.
