Why do you have to pay so much money at “fine” restaurants to eat disgustingly sounding food?
“grilled stuffed squid in a squid-ink risotto made with cocoa nibs”….
what the hell is that? and why would you shell out hundreds to eat it??
the article actually said “nibs” though, not “ribs”….what are nibs??
You don’t “HAVE” to pay for something that doesn’t appeal to you, but limiting your taste buds to the same old thing always will cause you to miss some of the greatest taste experiences out in the world.
Cocoa nibs, for example, are the HEART of chocolate. They are roasted cocoa beans, separated from the shell, and then crushed. If you haven’t had these crunchy, wonderful things but like chocolate — you don’t know what you’re missing.
Squid ink is a common ingredient in many non-American dishes. It’s actually quite a comfort food type of taste when done in a risotto.
Squid itself (maybe you’ve had fried calamari in an Italian restaurant – that’s squid) is more of an acquired taste. Fresh squid is expensive when not in season and it has to be imported. The same thing can be said for a lot of seafood – Alaska King Crab or Maryland Blue Crabs for example, or wild salmon, or mahi mahi.
